Fried Chicken and (Bacon, Cheddar, and Green Onion) Waffle Sandwiches

“Oh cute,” you might say, “someone has taken the dish ‘chicken and waffles’ and turned it into a sandwich. Fried chicken, waffle for buns–what a nice idea. Changing the format a little! Nice to mix things up.”

But you would be wrong. This recipe, from Jonathan Melendez’s Candid Appetite, is more than cute. It is KOOKERY. And the secret to these Fried Chicken and Waffle Sandwiches‘ genius is all in the “bread”: they’re bacon, cheddar, and green onion waffles, with all three ingredients mixed into the batter.

A lot of people would just roll with that idea and call it a day, but Melendez paid attention to the small stuff. There’s a dash of hot sauce in the chicken batter, and he makes his own maple mustard sauce. If there are any upstart brunch spots out there in America looking for a trademark sandwich recipe, you’re welcome (but really, thank Jonathan).
